Yum-O
In honor of Cinco de Mayo, I made arroz con pollo a la "I Love Lucy" for dinner (or, chicken and rice). :) Luckily it turned out much better than Ricky's. I'm very exicted that it actually turned out exactly the way I wanted it, and the Hubs gave it a thumbs up so YAY for me and my cooking skills.
No photo but:
One pound chicken breast
Two egg Whites
1/2 Cup Italian Bread Crumbs
1/2 Cup Panko
-Preheat Oven to 400 Degrees
-Combine Panko and Italian Bread Crumbs in bowl
--Drudge chicken breasts in egg then Bread Crumb mixture
-Place chicken breasts in frying pan with one tablespoon extra virgin olive oil
-Cook 5 minutes, flip and cook another 5 minutes
-After the outside is crispy, put the chicken in a baking dish and put into oven at 400 degrees for 25-30 minutes.
Serve with rice and broccoli.
Serves 3-4 people.
